Use of sourdough
Usually, we associate the sourdough – a leavening agent consists of many good bacteria – the bread or the traditional desserts with long leavening, such as panettone. The sourdough enthusiasts, however, know well that this leavening agent actually can be used for any preparation, fresh or salt it. We must take into account longer rising times (just leave the dough at night and bake in the morning), but flavor and digestibility will gain much. The apple pie with sourdough, one of the dishes that most remind us of home and know they cuddle, is a perfect example of how to use the dough for a sweet every day.
As a general rule, if you do the bread, you can consider about ¼ of the weight of the sourdough flour (per 100 g of flour, 25 g of sourdough). This ratio must be increased when preparing cakes: butter, eggs, sugar and other ingredients make heavier the dough so that it will need more leavening agent to grow well.
The recipe of the dough with apple pie
To prepare apple pie with sourdough refreshed in the morning and in the evening preleptotene 200 g. Add 200 ml of vaccine or warm vegetable milk, a teaspoon of honey and 200 g of flour. Stir the mixture well until it is smooth and evenly, cover and let rise overnight in the classic warm, dry place.
The next day mounted two eggs with 180 g sugar until mixture is thick and fluffy. Add the seeds of a vanilla bean, pinch of salt and cinnamon, 100 ml of extra virgin olive oil with a delicate flavor and a further 100 g of flour. Stir from the bottom up all the ingredients to mix them and then add them to the risen, gently mixing the two bodies. Line a mold with baking paper and pour the base of the dough with apple pie. Let rise for another 4 hours.
Bring the oven to 200 degrees and peeled and cut into slices 600 g apples. Season with a little drop of lemon, Calvados, a tablespoon of sugar and cinnamon. Distribute the apple slices on the cake, pressing them lightly on the surface, but not deflate the cake with sourdough apples.
Bake in preheated oven and cook for 20 minutes at 200 degrees, after which continued for another 40 minutes at 180 degrees.
